Rarely used by Indians to describe their food, the word has become a catchall for any Indian dish, or Indian food in general. Colleen Taylor Sen is a food writer and journalist specializing in the cuisine of India. She is the author of Food and Culture in India (2004), and a regular contributor to publications such as Travel and Leisure, Food Arts, the Chicago Sun Times, the Chicago Tribune and the Globe and Mail.
