Author Biography:

Dr. Pinki Saini is presently working as Assistant Professor at Centre of Food Technology, University of Allahabad. She completed degree of MSc and Ph.D. in Food Science and Technology from the G. B. Pant University of Agriculture and Technology, Pantnagar in 2005 and 2008 respectively. She has 11 years of teaching and 14 years of research experience. Published several research papers in journals and conferences. Completed 2 sponsored research projects, filed one patent and authored 10 book chapters. Her research interests include bioprocessing of foods, fermentations studies, biosorption of heavy metals, biofilm formation and development of edible films from plant and microbial sources.
