Author Biography

Michael Kirtsos, MS, RD, CSSD, LDN, is the director of nutritional services/clinical nutrition manager for HealthSouth Acute Rehab Hospital. He is also an adjunct professor of sports nutrition at Salisbury University, a dietitian for the Salisbury University Athletic Department, and a board member for the Maryland Academy of Nutrition and Dietetics. Michael is board-certified in sports dietetics by the Academy of Nutrition and Dietetics. He has a master's degree in applied health physiology/exercise physiology, with a concentration in strength and conditioning. Joseph Ewing is a clinical dietician with Genesis Healthcare, a freelance dietician, and a personal chef. He is the author of four cookbooks, among them Idiot's Guides: The Chia Seed Diets. He holds degrees in culinary nutrition and culinary arts from Johnson and Wales University, and he completed a dietetic internship program at the University of Maryland.
