The first thing I cooked was the ‘korma chicken’ as it is my fave at little India, it was so beautiful, the recipe was so true to the restaurant dish. Well done little India, I will try most of your recipes, because I live in Rotorua, I don't often get the chance to go to your restaurant. Thanks for sharing!

Since the first restaurant opened in Dunedin, New Zealand twenty-two years ago, Little India has become a firm favourite with lovers of authentic Indian food. Now you can recreate in your own kitchen the traditional curries, rice dishes, breads and accompaniments that feature on the LIttle India menu.

Based on recipes handed down through the owners' family, and adapted for home cooks, these dishes dispel the myth that Indian cooking is complex and time-consuming to prepare. Whether you are a novice cook or have plenty of experience, you'll find the recipes shared by Little India in this cookbook are easy to perfect and deliver the mouth-watering tastes of authentic North Indian cooking.

SAMPLE RECIPE

Lamb Bhuna Gosht (pictured)
Lamb Bhuna Gosht is one of our drier lamb curries. Slow and steady cooking of this dish develops a beautiful depth of flavour. Poppadoms go very well with this dish.

Serves 6
¼ cup canola oil
1 onion, puréed to a fine consistency
2 tbsp crushed fresh garlic
2 tbsp crushed fresh ginger
500g lean lamb leg, cut into 3cm x 3cm cubes
1 tsp ground turmeric
1½ tsp garam masala
1 tsp salt
1 tsp paprika
3 medium tomatoes, diced
½ cup tomato purée
½ cup chopped fresh coriander
1 cup cold water
Salt and red chilli powder to taste
Chopped fresh coriander to garnish

Heat oil in a large pan over a low heat. Add puréed onion, stirring continuously so it doesn’t stick to bottom of pan. Cook until almost brown.

Add garlic and ginger and cook until softened and browned.

Add cubed lamb and cook until just browned. Add turmeric, garam masala, salt and paprika and continue cooking until you start to smell the spice aromas.

Stir through tomato and keep cooking until you start to see oil separating from onion and spice mixture. Be sure to take your time with this and keep stirring so that it does not stick to bottom of pan.

Add tomato purée, coriander and cold water and cook until these combine. Put a lid on the pan and continue to simmer over a low heat until oil has separated from gravy. This can take a few hours and you may need to add more water if the gravy dries out too much. Remember this is a drier dish so use extra water only if needed. Once lamb is tender the dish is done.

Season to taste with salt and chilli powder. Garnish with chopped fresh coriander.

Cook’s Note: Lamb dishes take a long time to cook. You will need to be patient and cook the lamb until tender, which can take 2 hours or more. You can use a pressure cooker to speed up the process.

The Little India chain spans New Zealand, with seventeen popular restaurants from Auckland to Invercargill. What sets Little India's cooking apart is the family-based recipes handed down by the original owner's mother Premjit Kaur Gill. Little India chefs are still trained in her kitchen in Chandigarh, in North India, so traditional cooking techniques and values imbue every dish.
