Kim Koeller is an internationally acclaimed speaker, global consultant, and author and creator of the award-winning Let's Eat Out! series of books, ebooks, and mobile applications. The founder and president of AllergyFree Passport and its affiliate GlutenFree Passport, she educates businesses and consumers about special diet lifestyles, gluten- and allergy-free market trends, product manufacturing, food labelling, and technology. Her advice has appeared in National Geographic Traveler, USA Today, Hotels Magazine, and the Los Angeles Times, and on Martha Stewart Living Radio, among many others. After years of misdiagnosis, Koeller personally manages celiac disease and several food allergies including dairy, fish, shellfish, preservatives, and chemicals and has been 100% gluten and allergy free for 10-plus years. Robert La France is a restaurant industry veteran who has spent over 18 years across all aspects of restaurant operations and has worked with Asian, European and North American cuisines.
